Job Summary:
Under the general supervision of the Dietary Manager and Cook, the Dietary Cook prepares food in accordance with the applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures. Ensures quality food service is provided at all times.
Education and/or Experience Requirements:
- High school graduate or equivalent required
- Work experience: Should be knowledgeable in handling and preparing food.
- Food Handler’s Permit required.
- On-the-job training to include short demonstrations for up to and including 90 days.

SECTION A: ESSENTIAL JOB DUTIES
Food Preparation and Storage
- Prepares high-quality food items according to standardized recipes and instructions to meet production, delivery, and service schedules.
- Serves meals or prepares for delivery using correct portioning, meeting outlines standards, ensuring that food is at the correct temperature and is attractive and tasty. Tastes all prepared food items.
- Prepares catered items and special meeting meals in a timely manner.
- Uses established ticket collection procedures during service. Responsible for records from area worked during service periods.
- Plans cooking schedule so that food will be ready at specified times.
- Reviews menus and work orders to determine type and quantities of meats, vegetables, soups, salads, and desserts to be prepared.
- Prepares nourishments as per job routine (ADA, LTC, & OB).
- Records temperature of refrigerator, freezers, and food.
- Prepares Patient/Client Menu
- Assembles all food items patients ordered as per diet order in correct portions.
- Completes patient menu requests and modifies patient requests as per diet order.
- Fills nursing requests in a timely manner and delivers to the floor when needed.
- Processes all diet orders, updating patient diet order sheet and menus.
- Checks and processes patient food preferences.
- Processes trays accurately.
- Cleans kitchen after preparation and serving, maintaining high standards of cleanliness. Stores or discards excess food in accordance with safe food-handling procedures.
- Keeps refrigerators and storerooms clean and neat. Ensures food and supply items are stored per standard.
- Washes and sanitizes appliances used in food preparation.
- Cleaning done as per cleaning schedule.
- Maintains work areas as per WAC standards.
- Washes pots, plans, and utensils in food preparation to sanitize, and delivers to dishwasher area to be run through dishwasher.
- Assists other dietary workers by putting away pots, pans, and utensils in an orderly manner.
- Assists in production planning, record keeping and reporting as required.
- Assis in the ordering and receiving of all food and supplies as required.
- Reports needed maintenance, faulty equipment, or accidents to the supervisor immediately.
- Attends in-service, safety meeting and staff meetings.
- Maintains good working relationships with coworkers, customers, administrators, and managers.
- Performs job safely while maintaining a clean, safe work environment.
- Sweeps and mops floor to comply with safety and sanitation standards.
- Washes worktables, walls, refrigerators, cutting boards and other food prep surfaces. Removes trash and places it into designated containers. Cleans garbage cans.
- Assist with loading and unloading of delivered supplies.
- Washes dishes with the use of the dish machine and properly maintains that machines.
- Greets customers courteously and interacts in a manner to ensure customer satisfaction. Relays relevant concerns from customers to Director.
- Rounds on the front of the house seating area to ensure tables are clean and trash is managed.
- Transport patient food cart to the unit and delivers those patient meal trays.
- Serves customer quickly to prevent delays in serving line. Also assists the Barista with making coffee beverages when needed.
Other Duties
- Must be willing to help other positions as time permits.
- Helps write menus and offer creative menu ideas.
- Performs other related duties as assigned.
Pay Range: $18.00-$27.50
